Fresh fish should be transported and stored in temperature to 4°C or lower. Frozen fish should be transported at a temperature from -5°C to -20°C. If fish are transported at a temperature higher than +4°C harmful bacteria can grow many times and the product becomes dangerous for consumption. Each refrigerator truck carrying fish or fish products must be equipped with thermograph to record temperatures during transport. Only proven in temperature can make sure that transport was at the right temperature.
